Newar's life is spent on celebrating and feasting extravagantly, no doubt there is saying in Nepali “Parbate bigryo mojale,Newar bigryo bhojale.”(Hilly people are spoiled due to pleasure while Newars are ruined by their feast).Every time I get invitation, my excitement level reaches above water level thinking about those aesthetically mouth watering foods and not to forget bountiful drink.
Yet, you might feel edgy in fear of breaking dining etiquette. If it’s your first Newar feast better learn the norms. Using spoon and being sumptuous is impolite, so be fussy and eat with hand.
In Newar’s feast sitting protocol to eating customs are stern. As elders are to be served first they are seated ahead in suku (straw mat).
A typical Newar feast begins with Baji (beaten rice) served in Lapti (leaf plate), includes Mushya (dried black soybean), Woh (lentil patties), marinated black-eye peas, gravy Pumpkin, and boiled spinach, Achar spicy mixture of vegetables. A feast is ready to eat only after buff meat stew is served and if you are vegetarian Newar feast is almost torment.
Furthermore, served with Alu-chowm(mixed stew of bamboo shoot, potatoes, black eye peas, dehydrated radish) and Aila and Thwon, homemade liquor in mud bowl (Salincha). If you hurry to empty whatever is there in lapti or salincha, host too will rush in to fill it up again. So be calm and enjoy all the rounds of feast until you are served with curd and salads; signifying the end of feast.
Newars are the ethnic group having caste hierarchies within, diversity amongst themselves are definite. However, food and festivals are identical. More than 200 authentic cuisines are their identity and they never compromise serving and treating you with their traditional royalty.
